
Getting Your Oven Temp Exactly Right
If you’ve ever baked bread, you know how finicky it is. A single degree of difference can be the gap between a perfect, golden-brown crust and something that just looks… off. It changes the color, the texture, and that specific crunch we’re all chasing. Usually, standard heating elements have a bit of a lag. They’re slow to react. To fix that, we use gold-coated infrared (IR) heaters. Why the gold? Think of a standard quartz tube like a leaky bucket—a lot of the energy just escapes into the air where it doesn’t do any good. By adding a thin layer of gold to the quartz, we basically build a mirror. It reflects that IR radiation straight back onto the dough. You get a much stronger hit of heat exactly where you need it, without having to crank the entire oven up to an insane temperature. It’s smarter, and it saves a lot of power. Speed and Balance The best part is how fast these things react. Heavy heating coils are like old trains; they take forever to speed up and even longer to slow down. These gold lamps are different. They respond almost instantly to the controller. That means your oven stays right where you set it. No wild swings. But a word of caution: you have to match the wattage to your oven’s size. If you go too high and your fans aren’t pushing enough air, you’ll end up with “hot spots.” You don’t want the outside of your loaf to burn while the middle is still raw dough. Keeping Things Running If you’re swapping these into an existing setup, they should slide right in. We’ve used reinforced connectors because, let’s face it, industrial ovens go through a lot of expanding and contracting. These are built to handle that stress. One big rule, though:don’t touch the gold surface with your bare hands. It sounds strange, but the oils from your skin create tiny hotspots on the quartz. Those spots eventually cause the tube to fail. Grab some lint-free gloves during installation to make sure you aren’t accidentally shortening the life of your heaters. And every few months, have your team double-check the reflector alignment. It only takes a minute, but it’s the only way to make sure every loaf on the rack gets the same amount of love.
