
Stop Fighting Your Oven: How to Get Instant Heat Control
If you’ve ever spent a shift fighting with a deck oven to keep your temperatures from spiking, you know the frustration. You turn the heat off, but the oven keeps cooking. By the time the temp actually drops, your crust is overdone. Standard heating coils are just too slow for this. They hold onto heat like a sponge. To fix that, we use short-wave infrared (IR) quartz lamps. They give you a response time that actually keeps up with your workflow. Why it works It comes down to weight. Heavy cast-iron elements take forever to warm up and even longer to cool down. Our IR tubes are different. They don’t “soak” in heat; they beam it. The energy moves at the speed of light, hitting the dough instantly. We’ve spec’d these tubes specifically to handle constant on-off switching. You won’t have to worry about the filament snapping just because you’re adjusting the temp every few seconds. The nitty-gritty on the build We use high-purity quartz glass so the heat actually gets out of the tube and into the oven. Inside, there’s a halogen cycle that stops the tungsten from evaporating and clouding up the glass. This means your heat stays consistent, even after thousands of cycles. One quick tip: check your connectors. We use R7s or Sk15 because they fit tight. If your connection is loose, you’ll get a hotspot. And trust me, a hotspot at this wattage will melt your wiring or fry your socket real fast. A few things to watch out for These lamps put out a massive amount of heat the second you flip the switch. It’s great for a perfect crust, but it’s a lot for your electronics to handle. Make sure your PID controllers and SSRs (Solid State Relays) are rated for the peak current. If they aren’t, you’re going to smell burning plastic. Also, keep your oven vented. If the air inside gets too stagnant, the ambient heat builds up and you lose that “instant off” advantage. The best part? These are drop-in replacements. Just match your voltage and wattage, wire them in, and that annoying thermal lag is gone.
